The latest update for Hitpay on the iPhone resulted in a less efficient way to click on the variants for a product. Before the update, one could see all the variants at one glance, but now one has to click into each variant to see what each one is.

Raymond here, product manager @ HitPay. 
For context, we implemented this change to cater to products with multiple variants. This UI change allows you to select a particular variant from options easily without having to scroll through a long list of possible permutations. 
Can I clarify how the UI change is impacting your workflow? Is it because the variant price is only displayed upon clicking the specific variation? 
How does having the list of variants + price help in one glance? And how important is it to your business operations? Thanks!

I understand the changes. I guess we would have to rename our variants so that we can tell the difference.
